You should not respond to these messages with your personal information. I get one or two of those every week. It drives me mad and so angry.
I usually send back several hundreds of emails to the sender with a very rude text expressing my frustration. I block the sender every time but they always use different email address. Is there anything we can do to stop this?

Never respond to the email messages, because you are only telling the spammers or scammers that your email address is active, and they will continue to send more fraudulent and malicious emails.
Please use your Junk/Spam filter to tag the email as spam or junk, so it can be filtered or sent to the your Spam/Junk folder.
